BERLIN — Paleo blueberry scones and fresh brewed coffee were among a few of the customer favorites Monday morning during the grand opening of Box Bistro on Farmington Avenue.
“I think everyone is pumped to have a place with quality food made fresh, and Paleo options,” said Southington resident James Bannon, the owner of Box Bistro.
Bannon spent 12 years as a high school chef instructor before deciding to open at 1240 Farmington Ave., formerly home to The Kitchen Table.
Besides the location in Berlin, he has also rented out church space in Plainville to prepare food for delivery to nearby gyms and fitness centers, such as Crossfit Plainville, Just Results in Plainville, Zen Yoga Bar in Unionville and Southington’s Crossfit Factory Square, where he also coaches.
Box Bistro has been used solely for food preparation since May.
This month is the first time Bannon has opened it for on-site dining.
High tables and stools line the back wall inside Bannon’s first storefront.
“There’s a couple different angles to this,” said Chris Edge, the town’s economic development director. “It’s not just healthy eating.”
